'EMPEDRAT' OF STRAWBERRIES
Now we can enjoy the strawberries!
They are rich in fermentable fiber that acts as a prebiotic and helps the growth of our intestinal microbiota, promoting countless processes that help keep us healthy.
Strawberries also have great antioxidant activity, therefore they have a repairing action on our body and a marked anti-aging effect. They also have a large amount of vitamin C and E, manganese and potassium.
They are very versatile, we can take them naturally, in jam, in coulis, shakes, smoothies, ice creams, mousses, sauces and in vinaigrettes, a sure hit!
Today we propose a fun, different and very healthy dish based on legumes, the classic “empadrat”.
- White beans from Santa Pau
- Spring onion
- Green pepper
- black olives
- Strawberry vinaigrette and pieces of this fruit
Cut the spring onion, green pepper, olives and some of the strawberries into small pieces.
Cut the cod into strips
Pass the beans through water
Mix all the cut ingredients together with the beans and season with pepper.
For the strawberry vinaigrette:
Mash the rest of the strawberries with a squeeze of lemon
Add salt and olive oil and beat by hand until it has the consistency you like.
